I randomly invented this as an easy sofa-supper when I had naff all in the fridge. It’s somehow vaguely Alpine or apres ski in nature and is the perfect end to a busy week. A heady mix of bread, chips and cheese - I mean, what could be better than that? The dairy ingredients are the absolute star of this dish, so invest your time and money there.
Take half a French baguette (are there non-French baguettes? anyway…) - smother it in wild garlic butter and bake in the oven. Standard skinny oven chips - bake until golden brown.
Make a truffled cheesy fondue sauce - start with butter and flour, add milk (or milk/cream combo for extra richness) and a ton of grated cheese - strong cheddar for flavour. Gruyere or Comte for artery-clogging gooeyness. Stir in some truffle puree or grate fresh black truffle if you are fancier. Cool very slightly, or the molten-ness will cause you oral harm.
Layer it all up in a bowl - garlic bread, topped with the chips, smothered in the cheesy fondue sauce and then melt some extra garlic butter and pour it on top. Season. You can play about a bit with some sharper flavours to compliment - so some pickled things (onions, cornichons etc) if you like a bit of zing.
Pour a very large glass of very, very cold dry white wine, toast yourself for being fucking marvellous and devour. Sexy food - I mean, look at that for a close up!
